These little blue fruits not only deliver vitamin C, vitamin B6, Vitamin K, and manganese, but they also contain antioxidants high all while being low in calories. Often referred to as a superfood for their health promoting benefits, they’re also a great go to for people looking to optimize their aesthetic and fuel performance. They’re low in calories, do not contain any cholesterol, are low in sugar, and don’t spike your body’s blood sugar levels. There’s also about 4 grams of fiber available in 1 cup of blueberries. Dang! - 2 eggs
- 1/4 tsp salt
- 1 ripe banana
- 1 tsp baking powder
- 1/4 cup maple syrup
- 1 tbsp ground cinnamon
- 2 1/4 - 1/2 cup quick oats
- 1/2 cup milk (or nut milk alternative)
- 1 1/2 cup blueberries (or mixed berries)
- 1 tbsp butter (or alternative oil, like coconut)
- 1/4 cup Swolverine Whey Protein Isolate Powder
- Preheat the oven to 350°F
- Spray a muffin tin with non-stick cooking spray -or- line with muffin liners
- In a large bowl mix together the banana and eggs, maple syrup, milk, and oil
- In a small bowl mix together the oats, protein powder, cinnamon, salt, and baking powder
- Combine the dry ingredients into the wet ingredients until well mixed
- Fold in the blueberries (or mixed berries)
- Spoon the batter into the tin until 3/4 full
- Bake for 18-20 minutes or until a knife comes out of the center clean (do not overtake!)
- Cool the muffins in the tin for 5 minutes before attempting to transfer to a wire rack
