Some starch is resistant to digestion and passes into the large intestine where much of it is used as a food source by the healthy bacteria living in our colon acting much like dietary fiber in food, soluble and insoluble fiber.

Since resistant starch is not metabolized in the small intestine it reduces the amount of glucose released into your blood stream, thus lowering the demand for insulin while also reducing the caloric density of food making it a great option for slow insulin release.
