Honey Cinnamon Peanut Butter Protein Cake - Swolverine

Peanut Butter Protein Cake Recipe

Prep Time: 30 minutes
Bake Time:
 14 minutes per layer (40 minutes total)
Servings: 12 slices

Ingredients:

  • 1/2 cup (112g) unsalted butter, room temperature
  • 1/3 cup + 2 tsp of Truvia Baking Blend or 3/4 cup (155g) sugar
  • 3/4 cup (108g) brown sugar, loosely packed
  • 3/4 cup (210g) peanut butter
  • 1/2 cup (115g) sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 1/2 cups (325g) all-purpose flour
  • 1 & 1/2 scoops of Swolverine Honey Cinnamon Peanut Butter Whey Protein Isolate
  • 2 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (120ml) milk
  • 1/4 cup (60ml) water

Peanut Butter Frosting Ingredients (Optional)

  • 1 8oz Cream Cheese (softened to room temp)
  • 1/2 cup butter (room temp)
  • 1/2 tsp pure vanilla extract
  • 4 scoops Swolverine Honey Cinnamon Peanut Butter Whey Protein Isolate
  • 4oz PB2 (more or less to taste)

Honey Cinnamon Peanut Butter Protein Cake - Swolverine

Directions: 

  1. Preheat oven to 350°F
  2. Either with 1 round cake pan (or 2-3 if you have them), line the bottom with parchment paper cut into a circle. Grease the sides of the pans (we used butter).
  3. In a large mixing bowl, cream the butter, sugars and peanut butter together until light in color and fluffy. Mix for 4 minutes (do not shortcut this).
  4. Add sour cream and vanilla - mix until well combined.
  5. Add one egg at a time and mix until just combined. Scrape down the sides.
  6. In a separate bowl, combine all dry ingredients
  7. Combine milk and water in another bowl.
  8. Add half of the dry ingredients to the batter and mix until well combined.
  9. Add the milk mixture and mix until well combined.
  10. Add remaining dry ingredients and mix until well combined.
  11. Make sure all ingredients are well incorporated.
  12. Divide the batter evenly between the cakes pans and bake for 14-16 minutes or until a fork comes out of the middle clean (baking time will depend on thickness/amount of layers - DO NOT OVERBAKE! This will make the cake hard!)
  13. Remove cake from oven and flop onto your platter immediately (be careful not to break the cake in half).

Frosting

  1. In a large mixer bowl, cream cheese, and butter together until fluffy
  2. Add in the vanilla extract
  3. Slowly add in protein and PB2 and mix until smooth
  4. Mixture should be light and fluffy

Assembly

  1. To put the cake together, use a large serrated knife to remove the domes from the top of the cakes so that they’re flat. Place the first cake on a serving plate or cardboard
  2. Spread a fine layer of the frosting on top of the first layer.
  3. Add the second layer of cake on top of the frosting.
  4. Add another layer of frosting on top of the cake and spread evenly
  5. Top the cake with the remaining layer and frost the outside of the cake.
  6. Top with cinnamon and PB2 (we put walnuts on top for decoration).
