PRO TIPS:

  • Salt is used in baking to preserve. Lemon does the same! Lemon is a great replacement for salt. Use half as much lemon juice of the prescribed amount of salt in the recipe.
  • All of these cookies store very well in the freezer for a few weeks, even a few months! Otherwise, store the cookies in an airtight container at room temperature for 3-5 days.

Protein Cookie Recipes - Swolverine

Oatmeal Chocolate Chip Protein Cookies

Serving Size: 20 cookies

Prep Time: 10-minute prep, 8-10 minutes bake

Ingredients:

  • 2 cup old fashioned oats
  • 1 scoop (30g) Swolverine Protein powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 - 1/2 cup semi-sweet chocolate chips
  • 6 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 2 egg whites

Directions

  1. Preheat your oven to 350 degrees.
  2. Put one cup of your old-fashioned oats into the food processor and grind into a fine consistency – this will be your oat flour. The other cup of oats will be mixed with the other dry ingredients.
  3. Pour the oat flour into a bowl with the other cup of whole oats, the Swolverine vanilla protein powder, baking soda, and salt in a small bowl. Quickly mix it up and then set it aside.
  4. In another mixing bowl, mix the butter and sugar together. Slowly add in the other ingredients and the bowl of the dry ingredients, stirring in each one as you add them. Add the chocolate chips in last, stirring them in by hand.
  5. Start forming small, golf ball-sized balls with the mix and placing them on a silicone baking sheet and flatten them a little bit. They don’t spread too much when fully baked.
  6. Bake at 350 for 8-10 minutes. Check them at 8 minutes and add more time if needed.

Peanut Butter Protein Cookies

Serving Size: 12 cookies

Prep Time: 15 minutes, Bake time: 5-7 minutes

Ingredients:

  • 1/2 cup nut butter
  • 1/4 cup brown sugar
  • 1/4 tsp salt
  • 4 oz egg whites
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1 scoop (30g) Swolverine Protein Powder
  • 2 tbsp coconut flour
  • 2 oz semi-sweet chocolate chips

Directions:

  1. Preheat the oven to 350 degrees
  2. In a mixing bowl, stir together the peanut butter, brown sugar, salt/lemon juice, egg whites, and vanilla extract. Once it is mixed well together, add in the baking soda, the coconut flour, and Swolverine vanilla protein powder. Lastly, stir in the chocolate chips. If your dough is not firm enough, add more protein powder. If it is too firm, add a bit of milk or almond milk to loosen it up.
    • Make golf ball-sized balls of the mix and place it onto the baking sheet.
    • Place them into the oven for 5-6 minutes and evaluate whether or not they need to be in there longer based on the color and consistency of the cookies.

    Coconut Protein Cookies 

    Serving Size: 18 cookies cookies

    Prep Time: 15 minutes

    Ingredients:

    • 1 1/2 cups shredded coconut
    • 1/2 cup nut butter of choice
    • 2 scoop (60g) Swolverine Protein Powder
    • 1/4 cup honey or maple syrup
    • 1 tsp vanilla extract
    • 1 tsp cinnamon

    Directions:

    1. Preheat oven to 300 degrees
    2. Blend up coconut and seeds/nuts in a food processor until it’s in smaller chunks and blended well.
    3. Mix all of the ingredients together, blending it thoroughly with your hands. If it is too crumbly, add more honey.
    4. Scoop the mix into golf ball-sized balls, place on a cookie sheet, and flatten. Place them in the oven and start a timer for 15 minutes.

      Vanilla Protein Chocolate Chip Cookies 

      Serving Size:

      • 12-14 cookies

      Prep Time:

      • 10 minutes
      • Bake time: 7 minutes

      Ingredients:

      • 1/4 cup butter
      • 1/4 cup coconut sugar
      • 3 oz egg whites
      • 1 tsp vanilla extract
      • 1 scoop (30g) Swolverine Protein Powder
      • 1/2 cup almond flour
      • 1/2 tsp baking soda
      • 1/8 tsp lemon juice
      • 2 oz semi-sweet chocolate chips

      Directions:

      1. Preheat oven to 350 degrees
      2. In a mixing bowl, mix the shortening and coconut sugar thoroughly. Add in the liquids and mix. Then add in the remainder of the dry ingredients mixing well between each one. Lastly, fold in the semi-sweet chocolate chips.
      3. Create golf ball-sized scoops and place them on the cookie sheet. Bake for 6-8 minutes. Let cool for 3 minutes before moving the cookies.

      S’mores Protein Cookies

      Serving Size:

      • 6 balls

      Prep Time:

      • 10-15 minutes
      • Bake: 6 minutes

      Ingredients:

      • 90g Graham Cracker Crumbs
      • 2 scoop (60g) Swolverine Protein Powder
      • 2 tsp Unsalted Butter
      • 2 tbsp honey or maple syrup
      • 4 tbsp semi-sweet chocolate chunks
      • 2 tbsp mini marshmallows

      Directions:

      1. Preheat oven to 350 degrees
      2. Thoroughly mix the dry ingredients into a bowl first before adding the butter and syrup. Add an extra tbsp of syrup if the dough is too dry but try not to overhydrate the dough!
      3. Divide the mix into 6 pieces flattened on a cookie sheet. Place at least one semi-sweet chocolate chip and one mini-marshmallow in the center of each piece and enclose them by balling up the dough piece.
      4. Bake them for 6 minutes and let cool on a drying rack. Store in an air-tight container for 2-3 days.
