Healthy Collagen Protein Zucchini Muffin Recipe

Bake Time: 18 minutes
Cool Time: 5 Minutes
Servings: Makes 12 medium-sized Muffins

Ingredients:

  • 1/2 cup Almond Flour
  • 1/2 cup Old Fashioned Oats
  • 1/4 cup (29g) Swolverine Collagen Protein Powder
  • 1/4 cup Baking Flour
  • 1 tsp Cinnamon Powder
  • 1 tsp & 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1/2 cup Greek Yogurt
  • 2 tbsp Egg Whites
  • 1/4 cup + 2 tbsp Light Brown Sugar (lightly packed)
  • 1/3 cup Unsalted Butter
  • 1 & 1/2 cup Grated Zucchini (pat dry with a paper towel)

Directions:

  1. Preheat your oven to 350F (176C) and line a muffin tin with muffin liners or grease them with oil/cooking spray. Set aside.
  2. In a large mixing bowl, combine all dry ingredients (almond flour, oats, collagen, baking flour, cinnamon, baking powder, baking soda, salt). Set aside.
  3. In another bowl, beat the egg until it becomes slightly frothy. Whisk in the Greek yogurt, sugar, vanilla, and egg whites. Fold in the zucchini shreds.
  4. Combine the bowls together and mix gently until just combined *Do not overmix*. You can add some chocolate chips here if your heart desires!
  5. Pour the batter into the muffin tips, filling until almost full
  6. Bake for 18-20 minutes or until you can insert a toothpick into the middle of the muffin and it comes out clean. Allow muffins to cool in the pan for ~5 minutes until you remove them.
  7. Store these collagen protein muffins in an airtight container for up to 5 days or put them into an airtight container/bag and freeze for up to 5 months.
