Thai Chili Chicken Meatball Recipe

Meatball Ingredients:
- 2 lb ground chicken
- 2 tbsp all purpose flour
- 1/4 cup cilantro
- 2 egg
Glaze Ingredients:
- 1/2 cup peach jam
- 1/2 tbsp sweet chili sauce
- 1 tsp minced garlic
- 1/2 cup liquid ACV
- 2 tbsp cold water
Thai Chicken Chili Meatball Recipe Directions:
- Preheat oven to 400 F.
- Line a baking sheet with foil or parchment paper
- In a large bowl, mix together the ground chicken, flour, cilantro, and egg (use your hands, this is easiest)
- Spoon out a little meat into your hand and roll into a ball. The ball should be about 1-2 inches in diameter, based on your preference. Place them in rows on the baking sheet lined with foil.
- Bake the meatballs in the oven for 25 minutes or until golden brown
- While the meatballs are baking, mix together the glaze ingredients in pan over medium heat. Cook until the sauce begins to boil, then pull off the heat.
- Add sauce to a small bowl. Once you remove the meatballs from the oven when they’re cooked, add them to the bowl of sauce and coat the meatballs.
- Serve or meal prep with a vegetable and starch of choice (we like brown rice and broccoli).
